Divorce lawyer turned chef and farmer Michelle Evans juggles her duties with apparent ease, not least in lobbying landlords Pembrokeshire County Council to grant a vital renewal of their lease to secure a longer-term future for Paternoster Farm. Legions of readers wrote in to laud the ‘incredible local produce’ and the ‘wash of warmth and good feeling' that hits you on arrival. ‘Michelle cares about every bite you eat and always has time for a chat, no matter how busy the service is,’ added one nomination.

In a seductive corner of Monmouthshire, The Black Bear Inn, with its technically brilliant cooking, great warmth and astonishingly good wine list, drove hundreds of fans to lobby for its inclusion in our 100 Best Local Restaurants line up. It’s joined by the evolving brilliance of the Barrie brothers’ Y Marram at a caravan park on Anglesey – not the first place you’d expect to find whole wild sea bass in shellfish sauce or outstanding Pen Lyn spider crab caught just a few miles away. Also among the best in northwest Wales is Si Toft’s ever-buzzing Abersoch bistro, The Dining Room, while down in Cardiff, Antonio Cersosimo’s time-worn Casanova – which celebrates two decades in business this year – proves the uncompromising passion of an Italian classic is very hard to beat.
