Creative cooking in a fun-loving local bistro
Sommelier Oliver Roberts and chef Will Webster (both ex-Shibden Mill Inn) have set up shop in a former car showroom five miles from Huddersfield, and are creating quite a stir with their stylish, relaxed little bistro. Roberts is hospitality personified and his wine knowledge vast, while Webster is sending out the kind of plates that are bringing in diners from far and wide. Creativity comes in the form of tatty sauce, pickled onion Monster Munch beurre blanc, bisque custard and parsnip parfait, but there are zero gimmicks – it’s just Webster’s wry humour. In the kitchen, he is seriously good at putting together flavours, textures and colours that sing. You might begin with a mini crab tart studded with sharp, minute cubes of Granny Smith, followed by sherried Isle of Wight tomatoes and pangrattato topped with wild-garlic ice cream, or a stonking prawn crudo with peas in Thai basil vinegar topped with fig-leaf oil. There’s more wordplay with 'lamb ham and pickled clam', which turns out to be brined lamb (thinly sliced like ham), scattered with tangy clams and dressed with smoked hay oil – it’s extraordinary. Or ‘kind of like a chicken Caesar’ which has all the same elements, but arrives warm and completely unrecognisable. His Tunworth ice-cream sandwich with gingerbread also has diners in raptures: ‘fabulous food, exciting, interesting and beautifully presented’.
A varied wine list offers 10 reds and 10 whites, by the glass and bottle, plus a sprinkling of sparklers. There's also a line-up of wacky cocktails with – you’ve guessed it – daft names such as 'Itsy Bitsy, Teeny Weeny, Tasty Little Strawbellini'. Messrs Roberts and Webster are having huge fun here, and so will you.
