Set within one of the best independent wine merchants in the country, surrounded by hundreds of covetable bottles, Define also features a regularly changing wine list that tempts one to break the bank with a bottle of superb, exclusive Jacques Selosse Champagne. It’s like finding a boutique selling Dior couture in the middle of a field.  The restaurant itself is modern and airy, with the culinary emphasis on local and seasonal food. The owners also showcase excellent cheese and charcuterie from their in-house deli such as Cashel Blue with pickled cherries, almond and linseed toasts, fried Monte Enebro goat’s cheese with orange-blossom honey, and pan-roasted chorizo with red wine and tomato.  A summery dish of garlic-butter prawns delivered fully, while an asparagus salad with cured egg yolk and fresh peas was charmingly crisp and fresh. Some main-course meats have been a touch disappointing ('denture-challenging' picanha beef, for example), but there are also specialities such as pulled lamb shoulder with tabbouleh, mint labneh and spiced lamb sauce to consider. After that, the kitchen's take on affogato involving vanilla ice cream drizzled with Dark Woods espresso and Pedro Ximénez sherry makes a splendid finale. Also look out for special themed dinners hosted by visiting winemakers.
