Marcus Wareing protégés open Cumbrian pub with rooms

Marcus Wareing’s protégés Jake and Cassie White have opened the Pentonbridge Inn, a pub with rooms located 17 miles north of Carlisle. The husband and wife team worked with Wareing at Marcus at The Berkeley, where they were head chef and pastry chef respectively. At the Pentonbridge Inn, they are using Cumbrian produce and the majority of fruit, vegetables and herbs come straight from a local Victorian walled garden. Dishes include Orkney scallop, pumpkin agnolotti, bacon marmalade and violet artichokes, and fallow venison, parsnips, Sauternes and poached quince. pentonbridgeinn.co.uk

Ollie Dabbous set to return in 2018 with new Mayfair restaurant

He may have closed Dabbous and Barnyard earlier this year, but Ollie Dabbous is rumoured to be planning a high-profile return in 2018 with a new Mayfair restaurant. Dabbous and his business partner are reported to be looking at a 250-cover site on the corner of Piccadilly and Clarges Street, overlooking Green Park.

New head chef named at Blumenthal’s Hind’s Head

Heston Blumenthal’s recently refurbished Hind’s Head has named Pete Grey as its new head chef. Grey has worked at the Hind’s Head for the past four years and he takes over from János Veres, who leaves later this month. Before working for Blumenthal, Grey worked for Adam Simmonds and Paul Kitching. hindsheadbray.com

Ex-Chiltern Firehouse chef to launch first solo venture

Niall Davidson, who made his name at St John Bread & Wine and the Chiltern Firehouse, has revealed plans to launch a casual all-day bistro on City Road, near Old Street tube station. Called Nuala, the all-day 75-cover restaurant will open in January and include some seating around a firepit. Davidson will be joined in the kitchen by ex-Fat Duck chef Colin McSherry and front of house will be run by Charlie Sims, who worked at Noma in Copenhagen. nualalondon.com

Dishoom looks to Manchester for its next opening

With its fifth London restaurant opening in Kensington this month and last year’s Edinburgh launch proving a success, Dishoom is rumoured to be looking at a Manchester site for 2018.
